Our friend's at Cindy's Almost Famous Roux have shared their meatball stew recipe featuring the star ingredient, Cindy's Almost Famous Roux.
To get you started quickly making a delicious batch of meatball stew, we have packaged everything you will need for a quick and easy one click purchase. This meal kit will feed 6-8 people.
Bring water, Better than Bouillon and Roux to a rolling boil. Reduce heat to medium/low and cook for 45 minutes.
Prepare and bake meatballs (see below). When cooked, immediately transfer them to the Roux mixture.
Add the mushrooms, (optional) potatoes and carrots, bring to a boil then reduce heat to medium/low.
And cook for 20 minutes.
Add green onions and parsley and continue to simmer for 15 minutes.
FOR THE MEATBALLS
1 lb. Ground Beef
1 lb. Ground Pork
2 Eggs beaten
½ cup Seasoned bread crumbs
½ cup Grated parmesan cheese
½ cup Finely chopped onion
Salt, black pepper and garlic to taste.
Preheat oven to 400.
Combine all ingredients in a bowl, stir just until combined (don’t over stir).
Use a medium cookie scoop or spoon to scoop and form into 1 ½ inch balls.
Place on a lined and greased cookie sheet and bake uncovered 17-20 minutes, turning halfway through to avoid sticking.
Serve with rice, vegetable, bread & salad and ENJOY!
